Yuasa is the birthplace of Japanese soy sauce, and its preserved old town of latticed merchant houses, historic breweries and the Edo-era Jinburo bathhouse forms one of Kansai’s Important Preservation Districts. Traditional brewers such as Kadocho still make soy sauce by hand along the narrow lanes.
