A brown-sugar shochu (kokuto shochu) distillery founded in 1916 in the coastal hamlet of Wan on Kikaijima — one of the oldest kokuto shochu makers in the Amami Islands, still growing cane organically and making its own brown sugar on-site.

Why it's hidden

Kokuto shochu is legally distilled only in the Amami archipelago, and Kikaijima supplies most of Japan's kokuto (brown cane sugar); this century-old family brewery lets visitors follow the whole chain from cane to sugar to spirit, including tasting fresh unaged distillate reserved for tour visitors.
